UPMA
Upma is the basic VEG RECIPE OF SOUTH INDIA. I am sure most of you guys have started to learn cooking starting from Upma. Upma is in the first chapter of Cooking. Upma is a SOUTH INDIAN savory BREAKFAST made with semolina, spices and curry leaves. It can be served with chutney pudi or coconut chutney.
Upma tops the list of easiest and quickest instant breakfasts that can be made just under 20-30 mins. Since most of the INDIAN BREAKFAST FOODS take a considerable amount of time to prepare and to cook. Making Upma doesn’t take much time to cook if you have the roasted semolina ready. My mom taught me to always semolina and then keep in an air tight container so that it won’t spoil and stays good for longer. Ingredients:
1. Rava – 1 cup (medium size)
2. Onion – 2
3.Green chilly – 4-5
4.Bengal gram -1 table spoon
5.Urad dal -1 table spoon
6.Oil – 1/4 cup
7.Mustard – 1 teaspoon
8.Curry leaves – 6-7
9. Lemon juice -2 tablespoon
10.Coriander – few
11.Grated coconut – 2-3 tablespoon
12. Salt
Procedure for making upma:
1. Chop the onion and green chilly. (Chopping onion is quite difficult and tearful. cut onion into two pieces and put it in a bowl of water for 3mins before you start chopping. TA-DA you won’t cry while chopping.)
2. Take a pan and roast the rava for 2-3 minutes on medium flame until it release nice roasted aroma.
3. Transfer it to a plate or bowl and keep it aside.
4. In the same pan, heat the oil. add mustard, bengal gram, urad dal and fry until it becomes golden brown. Make sure it does not burn.
5. Now add onion, green chilly, curry leaves and fry until the onion turns golden brown.
6. Add 2&1/2 cup of water to the pan.
7. Once it starts boiling, add salt as per your taste and stir well.
8. Add grated coconut.
9. While adding rava, stir continuously to avoid formation of lumps.
10. Close the lid and allow it to cook for 10minutes on medium flame.
11. Turn off the gas, add lemon juice and coriander and stir well.
12. Serve Hot Upma with 1 spoon ghee and hot filter coffee.
SECRET TIPS:
1. Rava has to be roasted nicely until it gives out a nice roasted aroma, or else the upma will be sticky. 2. If you want Upma to be more soft, instead of 2&1/2 cup of water add 3 cup of water.
