AVAREKAALU USLI RECIPE
Avarekaalu is the most favourite seasonal lentil. It is known as hyacinth beans in english. Avarekai season starts during december. Avarekaalu Usli is the top favourite avarekaalu recipe and also different from all other usli recipe.
Ingredients:
1. Avarekaalu / Hyacinth beans – 1 cup
2. Oil – 3 tablespoon
3. Mustard – 1 teaspoon
4. Curry leaves – 2 strands
5. Onion(chopped) – 2
6. Green chilli (finely chopped) – 5
7. Ginger (grated) – 1/2 inch
8. Garlic (crushed) – 6 cloves
9. Butter – 1 tablespoon
10. Coconut (grated) – 1/2 cup
11. Coriander leaves(chopped) – 2 tablespoon
12. Lemon juice – 1 tablespoon
13. Salt
14. Fenugreek/menthya – 2 teaspoon
15. Mustard – 1 teaspoon
16. Cumin/jeera – 1 teaspoon
Procedure for making Avarekaalu usli :
1. Take oil in a cooker, once the oil is heated up and mustard, curry leaves and onion.
2. Give it a fry for 2 minutes.
3. Add green chilli, ginger and crushed garlic and give it a good fry for 2-3 minutes.
4. Add avarekaalu and give it a good mix.
5. Add butter and fry until it gives out nice aroma.
6. Add half coconut, salt and coriander leaves and mix well.
7. Add water until just above avarekaalu so that you get little flowing consistency.
8. Close the lid of the cooker and pressure cook it for 4 whistles.
9. By the time it’s pressure cooked, dry roast fenugreek, mustard and cumin in a pan.
10. Grind it to make fine powder and keep it aside.
11. Once the cooker is depressurized, add the above prepared powder, remaining coconut and lemon juice .
12. Give it a good mix and it’s ready to serve.
You can also make ginger, garlic and chilli paste by grinding all of them together.
This tastes good with chapathi, rotti or with rice and sambar.
SECRET TIPS : Butter is the secret ingredient.
