BRINJAL CURRY
Brinjal is one of the low calorie vegetable which has iron. There are many ways to cook brinjal. This is one among the different brinjal curry recipes. You have already checked my yennegayi recipe in the previous post. If you have not checked it out here it is YENNEGAYI.
Ingredients:
1. Brinjal – 1/4 Kg
2. Onion – 1
3. Tomato – 1
4. Curry leaves
5. Oil – 3 Tablespoon
6. Mustard – 1 Teaspoon
7. Grated Coconut – 1/2 Cup
8. Poppy seeds – 1 Teaspoon
9. Roasted gram – 1 Teaspoon
10. Sambar powder – 2 Tablespoon
11. Salt
Procedure for making brinjal curry:
1. Heat oil in a pan, add mustard and let it splutter.
2. Add curry leaves and onion and fry until it turns to golden brown.
3. Add tomato and fry until it becomes soft.
4. Add brinjal and give it a 4-5 minutes nice fry.
5. Along with brinjal also add 1 tablespoon sugar and 1 teaspoon salt.
6. Add 1 glass of water and close the lid and allow it to cook for 5 minutes.
7. Add sambar powder and let it simmer.
8. Grind the grated coconut, poppy seeds and roasted gram and add the mixture to the pan.
9. Add water if you want it to be in thin consistency and let it simmer.
Serves: 4
Tastes good with dosa and rotti.
SECRET TIPS:
