KAJU KATLI

Kaju katli is one of the simple and easiest delicious North Indian sweet. This is one of the most common dry fruit based sweet recipe across the India.

Ingredients :

  1. Cashew nut – 1 cup

  2. Sugar – 1 cup

  3. Cardamom – 3-4

  4. Milk – 1 cup

  5. Ghee – 1/2 cup

Procedure for making kaju katli :

  1. Soak cashew nut in a bowl of milk for 15 minutes.

  2. Seperate cashew nut into a blender.

  3. Add cardamom and milk with which cashew nut had soaked.

  4. Grind it into a smooth paste by adding milk in batches.

  5. Transfer the ground paste into a thick bottom pan.

  6. Add a cup of sugar and allow it to blend it with the cashew nut paste in a medium flame.

  7. Stir continuously until the sugar dissolves completely.

  8. Add 1 tablespoon of ghee as and when required.

  9. Slowly the paste starts getting thicker.

  10. Meanwhile, grease the plate with ghee and keep it ready.

  11. Once the paste starts to seperate from the pan and becomes non sticky, transfer it into the greased plate.

  12. Tap the plate twice so that it sets nicely.

  13. Once it sets, cut it into a desired shape and allow it to cool down completely.

  14. Once it’s cool down completely, flip the plate on a tray and take out the kaju katli.

Store it in a air tight container.

SECRET TIP :

Don’t over cook, else kaju katli becomes hard.
