KARJIKAI
Karjikai is a sweet deep fried dumplings which is stuffed with sweet fried gram powder mixture which gives a festival vibe. Especially Ganesh chathurthi since my mom makes 108 karjikai for prasada.
Ingredients:
1. Fried gram powder – 1 cup
2. Jaggery powder – 1 1/2 cup
3. Dessicated coconut – 1/2 cup
4. Sesame seed – 1/4 cup
5. Poppy seeds – 2 tablespoon
6. Cardamom – 5-6 cloves
7. Maida/all purpose flour – 1 cup
8. Oil – 2 tablespoon
9. A pinch of salt
Procedure for making karjikai:
1. Take maida, oil and a pinch of salt in a bowl and add water in batches to form a dough.
2. let it rest for 1 hour.
3. Dry roast sesame seed and poppy seed in a pan and grind it coarsely with cardamom once it cools down and keep it for later use.
4. In a mixing bowl, add fried gram powder, jaggery powder, dessicated coconut, previously prepared sesame seed and poppy seed mixture and mix well.
5. Take a small ball of maida dough and roll it thin
6. Add 2 tablespoon of above prepared stuffing to half and close the edges. Or if you have karjikai mould you can make it easily.
7. Deep fry them in hot oil until it turns golden brown.
SECRET TIPS:
Close the edges properly or else the stuffing will leak out while frying.
