THONDEKAI CURRY/ IVY GOURD CURRY
Thondekai or ivy gourd is iron rich vegetable. thondekai curry goes well as a side dish for rice and sambar and also with chapathi. I like it more with chapathi though i tried it with rice for the first time.
This is very easy to make and since we’re cooking ivy gourd or thondekai before hand it will be ready in less than half and hour.

Ingredients:
1. Ivy gourd/thondekai – 1/2 kg
2. Coconut (grated) – 1/2 cup
3. Dry chilly 5-6
4. Mustard – 1+1 teaspoon
5. Cumin seeds – 1 teaspoon
6. Bengal gram – 1 tablespoon
7. Urad daal – 1/2 tablespoon
8. Curry leaves – 1 tablespoon
9. Turmeric powder – 1/2 teaspoon
10. Oil – 3 tablespoon
11. Salt
12. Tamrind juice – 3 tablespoon
Procedure for making thondekai curry:
1. Cut ivy gourd into four pieces and cook for 1 or 2 whistles in a pressure cooker by adding turmeric powder, salt and water.
2. In a pan dry roast the mustard and cumin until the mustard splutter out and transfer it into the mixer jar.
3. Dry roast the red chilly for 2 minutes and transfer it into the mixer jar.
4. Add freshly grated coconut into the mixer jar and grind it coarsely without adding water.
5. Add oil to the same pan, once it is heated up add mustard and allow it to splutter out.
6. Add bengal gram, urad daal and curry leaves and saute it for 1-2 minutes.
7. Furthermore, add the above prepared mixture and tamrind juice and fry for 2-3 minutes.
8. Now add the cooked ivy gourd or thondekai and mix well.
9. Add salt as per the taste.
10. Close the lid and allow the ivy gourd or thondekai to absord the masala for 3 minutes.
11. give it a good mix at the end and it’s ready to serve.
SECRET TIP :
Sometimes ivy gourd or thondekai will be bitter, so adding turmeric while cooking in the pressure cooker helps to eliminate the bitter taste.
HEALTH TIP :
If you’re afraid of getting food poisoning after eating out because of the usage of different oil or anything you’re allergic to, eat one elachi or cardamom after the meal.
